Farfalle Chicken + Roasted Garlic


This is a copycat recipe of my all time favorite Cheesecake Factory dish, and it’s a good one.

🌿INGREDIENTS🌿
◽️1 Large Chicken Breast
◽️2 Tbsp Extra Virgin Olive Oil
◽️1 tsp Kosher Salt, 1/2 tsp Pepper
◽️1 lb GF Bow Tie Pasta (farfalle)
◽️1 pkg Center Cut Bacon (thinly sliced)
◽️1 1/2 c Quartered Crimini or Button Mushrooms
◽️1 c Chopped Onion
◽️1/3 c Sliced Sundried Tomatoes (in oil)
◽️3/4 c White Wine
◽️1 c Heavy Cream
◽️1 head Roasted Garlic (Minced)
◽️1/2 c Grated Parmesan Cheese
◽️3/4 c Frozen Green Peas (optional)

🔻INSTRUCTIONS🔻
1. Preheat Oven to 425F
2. Place chicken breast on a sheet pan and rub with olive oil, salt and black pepper. Roast the breast for 20(ish) minutes, or until cooked. Set aside until cool. Also, reserve the chicken drippings for the sauce.
3. Cook the bacon in a large sauté pan. Blot bacon dry when done to remove excess grease and set aside.
4. Using the same pan (with the rendered bacon fat) add the mushrooms and sauté on medium high heat until most of the liquid has evaporated. Add the onions and sauté until they’re caramelized. Add the sliced sun-dried tomatoes and sauté for another 3 minutes.
5. Deglaze the pan by adding the white wine and bring to a simmer. Cook until it has reduced by half. Use a wooden spoon the scrape the bottom of the pan to release the brown bits into the wine.
6. Meanwhile, bring a large pot of water to a boil; season the boiling water with 2 tablespoons of kosher salt. Cook the farfalle pasta al dente. I add my {frozen} peas to the pasta water shortly before draining cooked pasta. Reserve ½ cup of the pasta water once cooked.
7. Now add the heavy cream to the sauté pan and bring to a simmer. Add the roasted garlic paste to the cream sauce along with the reserved pan drippings from the roasted chicken and whisk to incorporate well. 
8. Chop chicken. Add it to the sauce and simmer the sauce for 5 minutes until slightly thickened.
9. Add Parmesan Cheese and stir constantly to incorporate well. (Use pasta water to thin the sauce if necessary.) Add salt and pepper to taste. Mix in the drained pasta and chopped bacon.
10. Plate + Enjoy!
