Sweet Pork {Cafe Rio | Costa Vida} Copycat


Thanks to a lovely friend of mine, I finally have a legit copycat recipe to keep our sweet pork craving at bay as we live in Houston


Before I added the brown sugar, enchiladas sauce and green chilis, I felt like the pork was going to be too watered down so I dumped most of the juice and made another batch of the stuff it started cooking in and than added the last 3 ingredients before letting it cook for a while more.

It turned out juicy, sweet and just as addicting as the sweet pork we have come to love when eating out. YAY! Of course you need their creamy house dressing so click HERE for my copycat of that too!

🌿INGREDIENTS🌿
◽️3 pounds pork roast (I used a Boston Butt pork roast)
◽️1 cup Worcestershire sauce
◽️2 teaspoon oregano
◽️2 teaspoon ground ginger
◽️2 teaspoon chili powder
◽️2 teaspoon garlic powder
◽️2 teaspoon salt
◽️4 tablespoons dried minced onion
◽️1 cup dark brown sugar
◽️1 can Old El Paso Mild Enchilada Sauce
◽️1 (4.5 ounce) can Old El Paso chopped green chilies, drained.

🔻INSTRUCTIONS🔻
1️⃣Place the roast in the slow cooker.
2️⃣In a large bowl, mix the worcestershire sauce, oregano, ginger, chili powder, garlic powder, salt and dried minced onions. 
3️⃣Pour HALF of the mixture over the roast, saving the other half for step 7.
4️⃣Set slow cooker to LOW and cook for 8-10 hours.
5️⃣Drain out [dump] most of the crockpot juice, leaving the roast and about a cup of broth.
6️⃣Shred the pork using two forks.
7️⃣Pour the rest of the sauce mixture (from step 2) into the slow cooker and mix in the brown sugar, enchilada sauce and chopped green chilies.
8️⃣ Allow flavors to blend by cooking for another hour or two before serving.
