🌿INGREDIENTS🌿
◽️1/2 Onion (Chopped)
◽️1 Tbsp Coconut Oil
◽️4-5 Cloves Garlic
◽️1 Tbsp Fresh Ginger (Finely Chopped)
◽️1/8 tsp Cayenne
◽️1/3 cup Smoked Sun-Dried Tomatoes (chopped)
◽️1 cup Chickpeas
◽️Zest from 1 Whole Lemon
◽️8 oz Fresh Spinach (2 cups steamed)
◽️1 can Coconut Milk
◽️1 tsp Salt
◽️Pepper to taste
🔻INSTRUCTIONS🔻
1. Chop onion. Set side. Mince the garlic and set aside. Mince ginger and set aside. Chop sun-dried tomatoes and set aside. Drain and rinse chickpeas. Set aside.
2. Heat a pan on medium-low heat. Once hot, add coconut oil. Then add chopped onion.
3. Once the onions are starting to soften, add the garlic. Stir and monitor closely to not burn the garlic. Add ginger about 1 minute after adding the garlic. Stir to combine.
Add cayenne pepper and sun-dried tomatoes. Stir to combine.
4. Add the drained and rinsed chickpeas to the pan.
5. Add the zest of 1 whole lemon to the pan and mix to combine.
6. Steam the spinach in a steamer, in the microwave, or add fresh spinach one handful at a time to wilt.
7. Add coconut milk. Let simmer to thicken.
8. Add pepper to taste and salt. Fold in fresh Cilantro if desired.
9. Serve over rice. Drizzle with lemon juice before serving.
